winamp

http://www.winamp.com/

I use this on one of my systems. It will catalog your entire tune collection.
itunes uses a proprietary format, so anything you bought from there may or may not work because of apple drm applied to itunes stuff.

anyway, it's a great zero dollar product. There's a pay version too, but seriously, the free version will do everything you want.

kinda depends what you mean by "organized".
I just switched to Foobar2000 from Winamp. It's got a slower learning curve but is open source and can do all sorts of weird and wonderful things.

I use Amarok. KDE app for Linux, in theory there's a version for Windows too, but I hear it's non-trivial to get running there.

Dude, it's 2010! iTunes isn't proprietary or drm-ed anymore.

I use Foobar 2000 for playout and MediaMonkey (http://www.mediamonkey.com/) for organisation. Try both. Winamp is great for general purpose playout but I think the library function sucks and can't use it any more for anything other than playing tracks direct from Windows Explorer.
