hardboiled, i'm assuming? i always just bang mine on the countertop all over the egg until the shell has lots of little cracks in it, then peel away--but i kind of slide the shell off of the egg. that membrane under the shell keeps the shell fragments more or less intact.

If its a very very fresh egg, it will always be hard to peel. Only thing that helps a bit is by starting the peel from the air pocket on the bottom.

Give it one decent rap on the counter then roll it with your palm, cracking it all the way around.

Eggs peel much easier if you shock them in ice water after boiling.

Yeah, what Bar said. I generally boil em for like 16, 17 minutes then fish em out and put em in an icewater bath for like 2 minutes and then take em out and boil em for two min and then back in the ice bath. It makes it expand and contract a couple of times which is what makes it easy to peel.

Then tap it on the counter and roll it all the way around and back which should give it a good crack all the way around the center.

Voila.

Bar is right, shocking the egg in ice water is the trick.

I'd boil them 10 minutes though that is long enough.

When I was living in Taiwan, I used to love the "tea-eggs" Man those were good!

I'd love to try a ten thousand year egg.... Or whatever they're called.

This is the only way I peel mine.

With this method you can peel them in under 10 seconds. I do this every day and have never had it fail once.

Ok i think i saw one of those thousand year eggs in a chinese store last week....whats that exactly and how do you eat it? The guy on the counter wasn't much help.
