I just found this on the net last week and made it tonight - potato leek soup - oh...my...god... wow.

POTATO LEEK SOUP

3 leeks
4 potatoes, quartered
1/4 cup butter
1/2 cup milk
1/2 cup light cream
1 qt. water or chicken stock
1/4 teaspoon fresh chopped chervil
2 T each chopped celery and shallots
1/8 teaspoon celery seed
parsley to garnish

Peel and quarter the potatoes.

Prepare the leeks by removing the green portions, reserving for another use if desired. Cut down the center lengthwise and wash thoroughly. Chop the white portions finely and sauté lightly with the chopped shallots in half the butter for 5-7 minutes. Add 1 quart of water or chicken stock, 1/2 teaspoon of salt, celery, the quartered potatoes, and simmer 20-25 minutes. Remove potatoes and leeks to a small bowl, reserving using a potato masher, mash to a puree in return the puree to the cooking water. Stir in the milk, cream, and remaining butter, reheating one minute if needed. Season to taste with salt and pepper. Garnish with parsley and croutons.

I don't usually like milk/cream based soups, but I might give this a try. Thanks.

Instead of 4cups (1 quart) of chicken stock I used 2cups chicken stock 2cups water - didn't want it too salty. I also left the skins on (I used 'new potatoes' that have a lighter skin) and it was quite good.

yeah potato leek soup is just clam chowder without the clams...haha. I just made clam chowder last night actually :D. got the clams fresh from tomales bay on saturday.

oh meeks, try adding some bacon in there. render and crisp about 6 pcs of bacon. pour out most of the fat except about 2T. then do your sauteeing of the leeks and shallots as you did before.

Ginger Chicken Miso Soup

Wash some spinach greens and tear into several pieces.
Getting boiling a quart of chicken broth, quart of water, throw in a generous bunch of chopped ginger (thumb sized piece), bring back down to simmer and let it go for a while for nice strong ginger flavor.
Cook some noodles. I prefer udon.
Cut up several chicken breasts in bite size pieces. Turn broth back to boil, dump in chicken pieces. When chicken is done, turn off heat and stir in miso to taste. I tend to use quite a bit.
Put spinach greens and noodle in bowl, and ladle in broth and chicken.
Slurp away and spice it up with hot sauce.
