Q1: I was reading a kung fu book today that suggested that stepping backwards with one leg and pushing on their back and bum with your hands while turning your head to the side should be enough to get your head out of a headlock - is that just dreaming? Would it work on a John Wang-size Headlock?

There are so many ways to get out of a head lock. The simplest way is just to use your left hand to push his right forearm and at the same time to pull your head back. The thing is all those counters are "relative" and not "absolute". In CMA, the correct skill is only the 1st 50%. The other 50% is the ability (Gong).

In both clips, the result will be better if you put your hand on your opponent's forehead (eyebrow mop) instead because the axis is longer.

That's a beautiful "over hook" arm control. The "leg twist" is not only an offense move, it's a perfect defense move than can give you many opportunity for combos.
