If he wanted to stab or slash her, he could have.
There were plenty of opportunities to do both.

I feel it is probably NOT fake, mostly because of the messiness of much of the action and the way the protagonists trip and fall several times.
If he had really wanted to maim or kill her, as often happens in "relationship gone bad" stories, he probably could have. But if he was, say, a bit drunk and wanted to use the knife as a "persuader" to ensure compliance in a rape, then I could imagine it happening like this.

If it's fake, it'd be pretty easy to find out through research. There'll be a police report or news story.

I have no reason to doubt it. It may be true he could have stabbed her, but imo it could be because he wasn't trying to kill her.

In any case, in that situation (alone in a deserted area), fighting back is recommended. If he's gonna kill you, make him do it there. Knowing martial art is a plus, but predators are often totally unprepared for resistance.

Another possibility is that the attacker was either drunk or high, which would have hindered his reflexes and motor skills.
