In this video (where his target is a trained martial artist) Mayo says near the end that he trained Krav Maga for 2 years. Not sure if he has any other training:

I found a discussion thread online where some LEO's were arguing about whether his youtube clips are real or not, some think he is not really a bounty hunter and it is all just a performance.

While I find his videos entertaining, after watching all of them none of the fights involve the chaos I've usually seen when attempting to apprehend someone.

None of them feature hair pulling biting, truly drunken behavior, etc. Also, on a few occasions he has allowed apparently hostile people to walk around him while escorting a criminal out and strangely the hostile parties didn't attack. It all comes off as a little staged, but funny none the less.
