One thing to consider is that the body of the tongue (舌体) shows more the state of the blood and deeper physiological substrate and the coat or"moss" (舌苔) shows state of the fluid physiology.

Thanks a lot, Kevin. Not sure what fluid physiology means, but I'm mostly looking at the coating (easiest to see). As a non TCM doctor, I don't think I have any idea what to look for on the body.
