It would be interesting to know his background.
The Whiskey Bottle Arrangement looks very similar to what we would call Plum flower.

I can categorically confirm there is no lineage based stick fighting system in ireland. However, the national sport hurling develops quite a lot of attributes necessary for warfare, such as speed, co-ordination, timing, spacial awareness.

I categorically confirm, there is no systematized method of traditional Irish stick fighting.
Now, in the ancient Irish history there are a lot of tales of training in sword fighting, spear fighting and projectile weapons.

I will say however, some people have there own "bag of tricks" and i've spoken with bare knuckle fighters who talk a lot about street smarts and set ups. I've no doubt such men existed and had a bag of tricks for using a irish stick or club effectively.
